Loooong Weekend

What a crazy, busy weekend! I feel like I have been away for a month! Everyday this weekend was filled with some sort of celebration. 

Friday morning I was up bright and early to help my parents with an event. I don't know if I've mentioned this before, but they are in charge of the Silestone market in the Midwest. On Friday they had Candice Olson, from Divine Design, come to their showroom to give a presentation to designers. (Candice is the spokeswoman for Silestone.) Then it was off to the Mall of America where she signed autographs for the public. Basically,it was a big publicity event for Silestone. Friday was also my brother's 21st birthday! Since my parents were having a company dinner, Chris and I went out to dinner with Billy and his girlfriend, Ashley. We went to Rock Bottom Brewery in downtown Minneapolis.

I had amazing grilled mahi tacos. They were served with coleslaw and a spicy pineapple salsa, with a side of guacamole, beans, and rice. I was stuffed after one taco, but ate 2. I also had a beer.


Chris wanted his chicken fried chicken to be on the blog ;)


I was the sober cab for the night so I stopped drinking after dinner. We headed back towards the Grand Ave. area of St. Paul, where we met up with my brother's friends at Billy's Bar and Grill. I stayed close by the entire night to make sure he didn't get dehydrated or out of control! It was a very long night and I was beyond tired, but my brother had a blast and that's all that matters!

I went to bed at 3 am on Friday, er Saturday morning, and had to be up at 7 am! I finished frosting/decorating the cake for the Silestone showroom's open house and then headed to work for a 7 hour shift. Tired is an understatement for how I felt that night. My brother had friends over for a big Mexican feast. My mom made a delicious assortment of Mexican dishes. I really wish I would have gotten a picture but I was so tired/lazy. For dessert we had the best chocolate cake ever. I usually don't care for cake because I find it bland and dry. I prefer cookies or ice cream. Well, this cake made me love chocolate cake. I used the recipe for Classic Chocolate Cake with Chocolate Ganache frosting from Baking Bites. Everyone raved about it. It was so moist and packed with rich chocolate flavor. This is my new "go-to" chocolate cake. If you are a chocolate fan, you must try this cake! (I am super sad because I thought I took a picture of it but I can't find it.)

Sunday I worked a 7 hour shift at the coffee shop again. The afternoon was incredibly slow so that made the day drag on. After work I went over to Chris' house and had dinner with his family. His mom talked me into having 2 glasses of wine. Yeah, it took a lot of convincing ;) It was a nice, relaxing way to end the busy weekend. 

My eating was all over the place this weekend. It usually was off to a good start and then went downhill. I blame being tired and unprepared for my poor eating habits this weekend. My stomach is pretty upset with me for filling it with more junk than usual. I'm obviously off of the cleanse and I feel disappointed in myself. My body felt so great the last few weeks. 

Today I got back on track for the most part. I started the day off with a hearty bowl of oatmeal made with bananas, strawberries, sliced almonds, and a little coconut. I worked all day again but this time I packed quinoa-chickpea pilaf for lunch. This was super filling and I didn't need a snack until almost 5. I had a big pear and a cherry chocolate Kashi granola bar. When my parents came home from work we went for a walk around the lake. It was such a beautiful evening, although a little on the cool side.  I wasn't too hungry for dinner because I picked on this while my mom prepared dinner:


This grilled veggie platter was leftover from this weekend's events. The vegetables are lightly grilled so they still have a nice crunch to them. You will definitely being seeing a lot of these grilled veggies this week! My dinner plate included grilled veggies and brown rice with a little bit of crusty french bread. Although I was full after dinner, I gave in and had the last small piece of chocolate birthday cake. 

I'm excited to be able to sleep in a little tomorrow morning! My plan is to run an easy 4 miles before breakfast. This is my last real run for the week- the rest of the week I'll just be running 2 miles to keep my legs loose. The half marathon is in 5 days!!!!!! See y'all in the morning!

The tacos look great...Chris's dinner not so much...haha.

Hi Monica, I feel this way sometimes after weekends too- it seems fine to enjoy eating several things that are not-so-good for you, but then you feel horrible about it afterwards! After a couple of days of being back on track, I am sure you will feel better (oats always help, I can see you feel the same way!).

Whenever I feel this way, I try to drink lots of green tea and water- I feel hydrating really helps.

You are such a good sis to be DD on the big 21st!

Anna- I already feel so much better just from the past 2 days. It's so hard for me to stay on track during the weekend, it is definitely a downfall for me. I agree that hydrating really helps. I try to eat as much fresh fruit and veggies as possible too, to flush my body!
